Horchata de Chufa recipe

When I was a young boy I went many times on holiday to Spain. One of the things I remember is the delicious taste of Horchata the Chufa.

Horchata is made from tiger nuts. This name is a bit misleading because tiger nuts are not real nuts. They are the edible tubers of the Cyperus Esculentus plant. In the Netherlands not many people use tiger nuts for Horchata. Most tiger nuts are being used as fishing bait for the common carper. I think this should change because it’s a drink that has great potential. Today I have made Horchata de Chufa myself. It tastes exactly as I can remember. It’s very easy to make!

Ingredients

  • 1 cup organic tiger nuts
  • 4 cups of warm water (not boiling)
  • 1/4 cup of sugar. I advise you to use a healthier sugar like agave, ahorn syrup or honey
  • Pinch of sea salt.

Directions

  1. Soak the tiger nuts for 24 hours in cold water
  2. Rinse the nuts, add the water and blend them in a powerful blender for two minutes
  3. Strain the mixture by using a nut milk bag
  4. Add the sugar & salt and mix them into the liquid. Tiger nuts are actually quite sweet themselves so you could skip this step if you want. In case you don’t like salt you can skip that too!
  5. Put the mixture in the fridge. You can keep it there for a few days (shorter is better).
  6. Serve with crushed ice in a glas. Drink ik with a straw.
  7. Enjoy!
